Happy Monday!

How was your weekend lovlies?

I had a busy Saturday and a nice, lazy Sunday.  Also, I totally put a deposit on getting a tattoo!  My appointment is the day before Thanksgiving, I'm so nervously excited!

My good friend and I spent half the day Saturday in Golden, CO.  I'd never been to Golden so it was really fun to wander around and check out a new tiny town.  We stopped at the tattoo shop that I'm going to (I have a friend who got his tattoos done there, it's a Christian tattoo studio, which is why it's worth driving to Golden for.)  We grabbed some pretty decent panini's (mine was way better than hers).  We also stopped at this ice cream/candy shop that makes their own little candies!
Look how cute!  I always love candy shops and their little displays :)  The caramel truffle that I had was DELICIOUS.

After getting home from Golden, I got myself "all dolled up" to head up to a Denver/Boulder blogger meet up in Boulder!  I never have a good excuse to go hang out in Boulder, so I was excited, that and I got to me so many fabulous women!

Driving into Boulder, Colorado really knows how to do the sky right.

The meet up was super fun, I was so nervous all day about hanging out with this large group of people that I'd never met, what if they didn't like me, what if I didn't fit in, what if I was under/over dressed. Turns out that none of that mattered.  These girls were great and we all laughed and ate and crafted together.  Kim was so sweet and did such a wonderful job organizing this night.

We got great little swag bags with treats from Yellow Heart Art, Capow, Lemon Jitters, Bow and Arrow Art, Snow Drift Designs and Fabricate.

Cupcake Tuesday-Cinnamon Peach and the Tuesday Tango!

Peaches are in season right now in Colorado, and that means we have AMAZING peaches!  They are so juicy and delicious, I love them!

These fresh peaches inspired me to make some delicious cupcakes!

These have fresh peach puree in them and then are topped with some cinnamon cream cheese frosting, yum!  To add to the delicious peachy-ness I took some of that puree and mixed it with some powdered sugar and drizzled it on top!  So delicious!

Let's get this going because these cupcakes are just too good to wait!

Peach Cupcakes
makes 24 cupcakes
2 sticks butter
1 cup sugar
2 eggs
vanilla
salt
1 1/2 teaspoons baking soda
1/2 teaspoon baking powdered
puree of one peach (about 1/2 cup)
1/2 cup sour cream
2 1/2 cups flour

Preheat the oven to 350 and line two cupcake pans.

In a large bowl blend together the butter and sugar with an electric mixer for about two minutes, until it gets slightly fluffy.  Add two eggs, one at a time, making sure to mix well after each addition.  Next, add the vanilla, salt, baking soda and baking powdered.

Measure out your flour.  With the mixer running, adding about 1/3 of the flour.  Follow this with the peach puree and mix until just incorporated.  Then add another 1/3 of the flour followed by the sour cream.  Last, add the remaining flour and mix well.

Scrape the sides of the bowl and mix one last time, making sure everything is incorporated.

Scoop the mixture into the cupcake pans, filling them about 2/3 of the way full.  I do this using an ice cream scoop, but you can also use two spoons.

Bake for 18-20 minutes or until a toothpick comes out clean.

Let cool

Cinnamon Cream Cheese Frosting
2 blocks cream cheese
1 stick butter
1/2 teaspoon cinnamon
2-3 cups powdered sugar

In a medium sized bowl mix together the cream cheese and butter until smooth.  Add in the cinnamon and continue to mix.

While the mixer is running slowly add in the powdered sugar, about 1/2 cup at a time, mixing completely after each addition.

Once the correct consistency is reached, scrape the sides of the bowl and mix one last time.

Pipe or frost on top of the cooled cupcakes.

Peach Glaze
1/2 cup peach puree
1 1/2 cups powdered sugar

In a small bowl mix the puree and powdered sugar together with a whisk.  Pour into a squeeze bottle or use a spoon to drizzle over the frosted cupcakes.

Soundtrack...Monday-The Lumineers

Hey all!

I'm so sorry for my lack of posting this weekend, I don't know what happened to me, guess I just needed a break!

So to make up for it I'm giving you your Soundtrack Saturday right here on this wonderful Monday.  Doesn't have quite the same ring, but it is what it is I suppose!

I saw the Lumineers at Red Rocks this weekend, hello amazing!  So here's another song from them, because I love them and I think you should to!

In unrelated news, I plan on returning this blog to it's normally scheduled programing.  How about some Olympic cupcakes tomorrow?  Yeah, that'll be fun!

Also I bought peaches!  Yummy, fresh Colorado peaches so keep your eyes out for happenings with those this weekend, I'm thinking coffee cake! :)

Weekly Wrap Up

Happy Friday!  The weekend is in sight lovelies!

How was your week?  What were you up to this week?

I sadly don't have a lot to chat about this week, it was just an average week.  Nothing super amazing in anyway and nothing horrible, it was just, life.  It was nice.  It was a pretty relaxed week full of a LOT of baking, which is a lot of fun but a touch tiring when you're always doing it around 11 at night.  You know how some bloggers are morning people?  That is so NOT me!

I am always up super late at night doing all sorts of things, mornings are just not for me, as much as I would love for them to be.  Such is life.



My friend has a bunch of Where's Waldo books, and check it out, I found Waldo, woohoo!



Told you I did some baking.  Vanilla raspberry anyone?



Getting ready for camp this week, isn't this sun great!



Ah, I love the park across the street from me, it's so wonderful.  Too bad it was 100 degrees out that day.



Oh wow it has been SO hot!  There have been some thunderstorms recently, it's been better!



Ah!  Getting ready for our first, in home Martini Monday, I have a slight obsession with that bar cart!



See that, that's not a cloud, that's some smoke from one of the fires.  It's crazy.



It's totally normal to take cupcakes on a .8 mile walk, right?  That's what I thought.  Dulce de Leche cupcakes (recipe soon).

Thankful Thursday!

Good morning lovelies!

I hope you are all having lovely week so far.  It's about that time again for us to be thankful.

I know this is only the second time I've done this post, but it's so great for me to have to sit down and think about all of the blessings in my life, it's a nice reset moment in the week!

Here's this weeks list.

I am thankful to have the ability to share my baking with my friends and family.

I am thankful to have a home that I love.

I am thankful that I have been blessed with such a wonderful community.

I am thankful for the moments, even the small ones, that remind me how lovely life is.

I am thankful that my friends and family are safe and that the fires in Colorado appear to be more under control.

So there we have it, my brief list.

I hope that you compile your own list and that you think about all the blessings in your life!
